Coffee anyone?

Every Thursday we VISTA’s here at TLU are treated to a lunch, compliments the University.  Usually during the regular school year we go to luncheons that  are made special for the faculty and staff over at Hein dining hall on campus.  Chef Ernest puts together a different menu every week and its served buffet style.  Essentially we are eating dining hall, dorm food but with a fancy twist - with that said, its actually been pretty good.  I’ve joked that they turn what they feed us into stews and salads they feed the students.  Today was different, the students and staff are gearing up for finals starting Friday night so last week was the last faculty staff luncheon for the semester.  So today our supervisor, Tim, took us out to lunch, we went to a place called Chiro-Java.

Now Chiro-Java is no ordinary coffee shop/deli. It is owned by a Chiropractor and he has his office right in the middle of the coffee shop…literally.  You can totally order a sandwich and a coffee and while that is being made get your spine adjusted (only in Seguin).  Now as far as the food goes it’s not bad, but the coffee could use a little work.  It is literally the only coffee shop in Seguin and sometimes we find ourselves making the 15 minute drive over to New Braunfels on the weekends just to get a cup of  Starbucks.  I try not to make a huge deal that our little town only has one coffee shop – not one on every corner – with coffee that’s  less than average. But, after all, we are in Texas.  I don’t think any Texan would expect to go to the NorthWest, and have their choice of BBQ joint on every corner. 
Happy 125th birthday to Diego Maria de la Concepcion Juan Nempmuceno Estanislao de la Rivera y Barrientos Acosta y Rodriguez - a.k.a. Diego Rivera who, as it turns out, has an even longer name than Dikembe Mutombo (Dikembe Mutombo Mpolondo Mukamba Jean-Jacques Wamutombo).  Give it up to their moms for those healthy names.
This is what greeted us as we left the coffee shop.  It belongs to the Evangelical Food Pantry here in Seguin.
